MAHI-MAHI
(also know as Dorado and dolphin fish)

Mahi-Mahi has earned the reputation of being one of the top 10 best eating finfish in the U.S. Many markets prefer to use the name Mahi-Mahi instead of Dolphin fish to make certain there is no confusion with Dolphins- the mammals.

The fish average 5-25 pounds head off and gutted.

Mahi is found in nearly all warm water seas, including Hawaii, Florida, from Southern California through Peru, Taiwan and Japan. The majority of the product sold in our market-place is from Central America.

The season is year round, with peak season in the winter months.

The meat is firm in texture. Mahi is pink when raw, creamy white when cooked. It has a moist, sweet flavor.

SHRIMP ALERT
If you are being quoted shrimp prices that seem too good to be true we recommend that you:
1. Weigh the shrimp (to test accurately: wash away ice, but do not thaw the shrimp).
2. Count the number of shrimp in the box and divide by the weight of the box (usually 4 to 5 lbs) to determine the average number of shrimp per pound.
